- 1/4 cup grated parmesan cheese
- 1/2 tsp garlic powder
- 1/2 tsp smoked paprika
- 1/4 tsp salt
- 1/4 tsp cracked black pepper
Instructions:
- Slice the yellow squash into consistent 1/4 inch rounds and pat them completely dry with paper towels to remove surface moisture.
- Preheat the air fryer to 375°F (190°C).
- In a large bowl, whisk together the olive oil, grated parmesan, garlic powder, smoked paprika, salt, and black pepper until a thick paste forms.
- Add the squash slices to the bowl and toss gently using a folding motion until each slice is fully enveloped in the parmesan mixture.
- Place the slices in the air fryer basket, ensuring they are not overly overlapped to maximize crispiness.
- Air fry for 10 minutes, shaking the basket or flipping the slices with tongs at the 5-minute mark to ensure even browning.
- Remove the squash once the edges are mahogany-colored and the parmesan is golden, then garnish with fresh chopped parsley.
