  • 2 medium yellow squash (approx. 1 lb / 450g), sliced into 1/4 inch rounds
  • 2 tbsp olive oil
  • 1/4 cup grated parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp salt
  • 1/4 tsp cracked black pepper

Instructions:

  1. Slice the yellow squash into consistent 1/4 inch rounds and pat them completely dry with paper towels to remove surface moisture.
  2. Preheat the air fryer to 375°F (190°C).
  3. In a large bowl, whisk together the olive oil, grated parmesan, garlic powder, smoked paprika, salt, and black pepper until a thick paste forms.
  4. Add the squash slices to the bowl and toss gently using a folding motion until each slice is fully enveloped in the parmesan mixture.
  5. Place the slices in the air fryer basket, ensuring they are not overly overlapped to maximize crispiness.
  6. Air fry for 10 minutes, shaking the basket or flipping the slices with tongs at the 5-minute mark to ensure even browning.
  7. Remove the squash once the edges are mahogany-colored and the parmesan is golden, then garnish with fresh chopped parsley.
