Ingredients:
- 2 medium zucchinis, halved lengthwise (approx. 1 lb / 450g)
- 1 tbsp olive oil
- 1/2 tsp kosher salt
- 1/2 lb lean ground beef (90% lean)
- 1/4 cup finely diced yellow onion
- 2 cloves minced garlic
- 1/4 cup tomato paste
- 1/2 tsp dried oregano
- salt to taste
- black pepper to taste
- 1/4 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
Instructions:
- Slice the zucchinis in half lengthwise. Use a spoon or small knife to scoop out the center flesh, leaving a 1/4 inch wall around the edges to create a boat shape.
- Brush the exterior and interior of the zucchini boats with olive oil and sprinkle with kosher salt.
- Place a skillet over medium-high heat. Add the lean ground beef and cook until browned, breaking it apart with a spatula.
- Stir in the diced yellow onion and minced garlic, sautéing for 3-4 minutes until the onion becomes translucent.
- Mix in the tomato paste and dried oregano. Cook for another 2 minutes until the mixture is thick and savory. Remove from heat and season with salt and black pepper.
- Spoon the beef mixture generously into each zucchini boat, pressing down slightly to secure the filling.
- Top each boat with a portion of grated Parmesan and shredded mozzarella cheese.
- Place the boats in the air fryer basket and cook at 375°F (190°C) for 8-10 minutes until the cheese is bubbling and mahogany-colored and the zucchini edges are slightly charred.
