Ingredients:

  • 2 medium zucchinis, halved lengthwise (approx. 1 lb / 450g)
  • 1 tbsp olive oil
  • 1/2 tsp kosher salt
  • 1/2 lb lean ground beef (90% lean)
  • 1/4 cup finely diced yellow onion
  • 2 cloves minced garlic
  • 1/4 cup tomato paste
  • 1/2 tsp dried oregano
  • salt to taste
  • black pepper to taste
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese

Instructions:

  1. Slice the zucchinis in half lengthwise. Use a spoon or small knife to scoop out the center flesh, leaving a 1/4 inch wall around the edges to create a boat shape.
  2. Brush the exterior and interior of the zucchini boats with olive oil and sprinkle with kosher salt.
  3. Place a skillet over medium-high heat. Add the lean ground beef and cook until browned, breaking it apart with a spatula.
  4. Stir in the diced yellow onion and minced garlic, sautéing for 3-4 minutes until the onion becomes translucent.
  5. Mix in the tomato paste and dried oregano. Cook for another 2 minutes until the mixture is thick and savory. Remove from heat and season with salt and black pepper.
  6. Spoon the beef mixture generously into each zucchini boat, pressing down slightly to secure the filling.
  7. Top each boat with a portion of grated Parmesan and shredded mozzarella cheese.
  8. Place the boats in the air fryer basket and cook at 375°F (190°C) for 8-10 minutes until the cheese is bubbling and mahogany-colored and the zucchini edges are slightly charred.
