Ingredients:

  • 2 medium zucchini (approx. 1 lb / 450g), cut into 3-inch sticks
  • ½ tsp (3g) kosher salt
  • ½ cup (60g) Panko breadcrumbs
  • ¼ cup (25g) Grated Parmesan cheese
  • 1 tsp (2g) Garlic powder
  • 1 tsp (2g) Italian seasoning
  • ½ tsp (1g) Black pepper
  • 2 large eggs, beaten
  • 2 tbsp (30ml) Olive oil spray

Instructions:

  1. Cut zucchini into sticks roughly ½ inch thick and 3 inches long. Toss with salt and let sit for 5–10 minutes.
  2. Use paper towels to firmly pat each stick dry to remove surface moisture.
  3. In a shallow bowl, combine Panko breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, and black pepper.
  4. Dip each dried zucchini stick into the beaten eggs, shaking off any excess, then press firmly into the Panko mixture until fully coated.
  5. Preheat the air fryer to 400°F (200°C). Place the coated sticks in a single layer in the basket, ensuring they do not overlap.
  6. Lightly spray the tops of the sticks with olive oil spray to facilitate browning.
  7. Air fry for 5 minutes, flip the sticks with tongs, spray the other side with oil, and cook for an additional 5 minutes until deep golden brown and crisp.
