Ingredients:
- 2 medium zucchini (approx. 1 lb / 450g), cut into 3-inch sticks
- ½ tsp (3g) kosher salt
- ½ cup (60g) Panko breadcrumbs
- ¼ cup (25g) Grated Parmesan cheese
- 1 tsp (2g) Garlic powder
- 1 tsp (2g) Italian seasoning
- ½ tsp (1g) Black pepper
- 2 large eggs, beaten
- 2 tbsp (30ml) Olive oil spray
Instructions:
- Cut zucchini into sticks roughly ½ inch thick and 3 inches long. Toss with salt and let sit for 5–10 minutes.
- Use paper towels to firmly pat each stick dry to remove surface moisture.
- In a shallow bowl, combine Panko breadcrumbs, Parmesan cheese, garlic powder, Italian seasoning, and black pepper.
- Dip each dried zucchini stick into the beaten eggs, shaking off any excess, then press firmly into the Panko mixture until fully coated.
- Preheat the air fryer to 400°F (200°C). Place the coated sticks in a single layer in the basket, ensuring they do not overlap.
- Lightly spray the tops of the sticks with olive oil spray to facilitate browning.
- Air fry for 5 minutes, flip the sticks with tongs, spray the other side with oil, and cook for an additional 5 minutes until deep golden brown and crisp.
