Ingredients:

  • 1.5 lb sirloin steak, cut into 1-inch cubes
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tsp dried thyme
  • 3 cups cooked white rice

Instructions:

  1. Pat the beef cubes completely dry with paper towels and season generously with salt and pepper.
  2. Heat vegetable oil in a cast iron skillet over medium-high heat until it just begins to smoke.
  3. Add beef in a single layer, leaving space between cubes. Sear undisturbed for 2-3 minutes until a deep mahogany crust forms, then flip and sear for another 2 minutes.
  4. Reduce heat to medium. Add the butter, minced garlic, and dried thyme.
  5. As the butter foams, toss the beef continuously for 60-90 seconds to coat every piece in the emulsion.
  6. Stir in the fresh parsley and remove from heat immediately.
  7. Allow the steak bites to rest for 5 minutes before serving over cooked white rice.
