Ingredients:
- 1.5 lb sirloin steak, cut into 1-inch cubes
- 1 tsp salt
- 1/2 tsp black pepper
- 2 tbsp vegetable oil
- 4 tbsp unsalted butter
- 4 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
- 1 tsp dried thyme
- 3 cups cooked white rice
Instructions:
- Pat the beef cubes completely dry with paper towels and season generously with salt and pepper.
- Heat vegetable oil in a cast iron skillet over medium-high heat until it just begins to smoke.
- Add beef in a single layer, leaving space between cubes. Sear undisturbed for 2-3 minutes until a deep mahogany crust forms, then flip and sear for another 2 minutes.
- Reduce heat to medium. Add the butter, minced garlic, and dried thyme.
- As the butter foams, toss the beef continuously for 60-90 seconds to coat every piece in the emulsion.
- Stir in the fresh parsley and remove from heat immediately.
- Allow the steak bites to rest for 5 minutes before serving over cooked white rice.
