Ingredients:
- 1 sheet (255g) frozen puff pastry, thawed
- 5.3 oz (150g) Boursin Garlic & Fine Herbs cheese, softened slightly
- 1 large egg (50g), beaten
- 1 cup (150g) cherry tomatoes, quartered
- 1 tbsp (15ml) honey or balsamic glaze
- 1 tsp (1g) fresh parsley, chopped
Instructions:
- Unfold the thawed puff pastry onto parchment paper and use a pizza cutter to slice the pastry into 24 equal squares (roughly 2-inch by 2-inch).
- Use your finger to lightly press a border around the edge of each square to create a wall that prevents the cheese from overflowing.
- Place approximately 0.5 oz (15g) of Boursin cheese in the center of each square, spreading it slightly toward the edges with the back of a spoon.
- Press one or two quartered cherry tomatoes firmly into the cheese.
- Brush the exposed edges of the puff pastry with the beaten egg wash.
- Preheat the oven to 400°F (200°C) and slide the parchment paper onto a baking sheet.
- Bake for 18–22 minutes until the pastry is puffed and the edges are deep golden brown.
- Drizzle with honey or balsamic glaze and garnish with chopped fresh parsley before serving.
