Ingredients:
- 1 lb ground beef (80/20 blend)
- 1/2 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 4 oz cream cheese, softened and cubed
- 1.5 cups sharp cheddar cheese, shredded
- 2 tbsp heavy cream
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions:
- Place a 12-inch cast iron skillet over medium-high heat. Add the ground beef, pressing it flat with a spatula, and sear undisturbed for 3–4 minutes until a deep brown crust forms.
- Break the meat apart and sauté with the diced onions until the beef is fully browned and onions are translucent. Stir in minced garlic for the final 60 seconds.
- Lower heat to medium. Stir in smoked paprika, garlic powder, onion powder, salt, and pepper, cooking for 2 minutes to toast the spices.
- Stir in the cubed cream cheese and heavy cream. Fold gently until the cream cheese has completely melted into a thick, creamy sauce.
- Spread the beef mixture evenly across the pan and top with shredded cheddar cheese.
- Cover the skillet with a lid for 2–3 minutes until the cheddar is completely melted and bubbling.
