Ingredients:

  • 1 lb ground beef (80/20 blend)
  • 1/2 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 4 oz cream cheese, softened and cubed
  • 1.5 cups sharp cheddar cheese, shredded
  • 2 tbsp heavy cream
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Place a 12-inch cast iron skillet over medium-high heat. Add the ground beef, pressing it flat with a spatula, and sear undisturbed for 3–4 minutes until a deep brown crust forms.
  2. Break the meat apart and sauté with the diced onions until the beef is fully browned and onions are translucent. Stir in minced garlic for the final 60 seconds.
  3. Lower heat to medium. Stir in smoked paprika, garlic powder, onion powder, salt, and pepper, cooking for 2 minutes to toast the spices.
  4. Stir in the cubed cream cheese and heavy cream. Fold gently until the cream cheese has completely melted into a thick, creamy sauce.
  5. Spread the beef mixture evenly across the pan and top with shredded cheddar cheese.
  6. Cover the skillet with a lid for 2–3 minutes until the cheddar is completely melted and bubbling.
