Ingredients:
- 2 cups (250g) grated zucchini
- 1.5 cups (225g) fresh corn kernels
- 0.5 cup (65g) all-purpose flour
- 1 large egg, beaten
- 0.5 cup (50g) shredded cheddar cheese
- 3 tbsp (15g) finely chopped green onions
- 0.5 tsp (3g) garlic powder
- 0.75 tsp (5g) salt
- 0.25 tsp (1g) black pepper
- 0.5 tsp (3g) baking powder
- 3 tbsp (45ml) neutral oil
Instructions:
- Grate the zucchini into a bowl and toss with a pinch of salt. Let it sit for 5 minutes, then wrap the shreds in a clean kitchen towel and squeeze firmly over the sink to remove excess moisture.
- In a large bowl, combine the squeezed zucchini, corn, shredded cheese, and green onions. Stir in the beaten egg.
- Fold in the flour, baking powder, garlic powder, salt, and pepper. Mix until just combined; do not overwork the batter.
- Heat the oil in a skillet over medium-high heat until it shimmers.
- Drop heaping tablespoons of batter into the pan, flattening them slightly with the back of the spoon.
- Cook for 3–4 minutes per side until they reach a deep mahogany color and smell nutty.
- Transfer the fritters to paper towels to drain excess oil.
