Ingredients:
- 4 cups (600g) frozen corn, thawed and patted dry
- 1 tbsp (15ml) neutral oil
- 1/2 tsp (3g) smoked paprika
- 1/4 tsp (1g) salt
- 1/3 cup (80g) mayonnaise
- 1/2 cup (50g) Cotija cheese, crumbled
- 2 tbsp (30ml) fresh lime juice
- 1 tsp (2g) lime zest
- 1 clove (5g) garlic, minced
- 1/4 cup (40g) red onion, finely diced
- 2 tbsp (30g) fresh cilantro, chopped
- 1 tbsp (15g) jalapeño, minced
- 1/4 tsp (1g) ground cumin
Instructions:
- Heat the oil in a 12-inch cast iron skillet over medium-high heat until shimmering.
- Add the corn in a single layer and let it sit undisturbed for 2-3 minutes until deep golden-brown char marks appear.
- Stir and cook for another 3-5 minutes until the corn smells nutty and toasted.
- Stir in the smoked paprika and salt during the last 30 seconds of cooking to prevent the spice from burning, then remove from heat and let cool slightly.
- In a large mixing bowl, whisk together the mayonnaise, lime juice, lime zest, minced garlic, and ground cumin until velvety and uniform.
- Transfer the charred corn into the dressing bowl.
- Add the crumbled Cotija cheese, diced red onion, minced jalapeño, and chopped cilantro.
- Gently fold the ingredients together using a spatula until the corn is evenly coated and the cheese is distributed.
