Ingredients:

  • 3 lbs chicken wing sections (flats and drums)
  • 1 tbsp baking powder
  • 1 tsp kosher salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 cup unsalted butter
  • 3/4 cup cayenne pepper sauce
  • 1 tbsp honey
  • 1/4 tsp cayenne pepper

Instructions:

  1. Pat the wings bone-dry with paper towels.
  2. In a large bowl, toss the wings with baking powder, salt, pepper, and garlic powder until every wing is lightly dusted.
  3. For oven cooking: Preheat to 425°F (218°C). Place a wire rack on a baking sheet and arrange wings in a single layer. Bake for 45-50 minutes, flipping halfway through, until golden brown.
  4. For air fryer cooking: Arrange wings in the basket without overcrowding. Cook at 400°F (200°C) for 20-25 minutes, shaking the basket every 8 minutes.
  5. While wings cook, melt the butter over low heat and whisk in the hot sauce, honey, and cayenne pepper.
  6. Remove wings from heat and immediately toss them in the prepared sauce to coat.
