Ingredients:

  • 4 oz (113g) goat cheese, chilled
  • 2 oz (57g) low-fat cream cheese, chilled
  • 2 oz (57g) extra sharp cheddar, finely grated
  • 1 tsp (5g) fresh thyme, minced
  • 1/4 tsp (1.5g) garlic powder
  • 1/4 tsp (1.5g) salt
  • 1/4 cup (30g) all-purpose flour
  • 1 large (50g) egg, beaten
  • 1/2 cup (30g) panko breadcrumbs
  • 1/4 tsp (1.5g) paprika
  • 2 tbsp (30ml) honey
  • fresh parsley, chopped

Instructions:

  1. In a medium bowl, combine the chilled goat cheese, cream cheese, and grated cheddar. Fold in the thyme, garlic powder, and salt. Mix until integrated, but avoid overworking the cheese.
  2. Portion the mixture into 1-inch balls using a small scoop and roll between palms until smooth. Place on a tray and chill in the freezer for 30 minutes to maintain shape.
  3. Set up a breading station with three bowls: flour, beaten egg, and a mixture of panko and paprika. Roll each chilled ball in flour, dip in egg, and coat thoroughly in the panko mixture, pressing gently to seal.
  4. Preheat the air fryer to 400°F (200°C) and line the basket with parchment paper. Arrange balls in a single layer. Air fry for 8–10 minutes, flipping halfway through, until mahogany-colored.
  5. Drizzle with honey and garnish with chopped fresh parsley before serving.
