Ingredients:
- 10 large eggs
- 2 cups (60g) fresh spinach, chopped
- 1 cup (240g) cottage cheese
- 1 cup (120g) shredded cheese
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
Instructions:
- Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin with cooking spray or olive oil.
- In a mixing bowl, whisk together the eggs until fully blended.
- Add the cottage cheese, salt, pepper, and garlic powder to the eggs and mix until smooth.
- Stir in the chopped spinach and shredded cheese.
- Pour the mixture into the muffin cups, filling each about three-quarters full.
- Bake for 20-25 minutes or until the muffins are puffed and a toothpick inserted in the center comes out clean.
- Allow the muffins to cool for a few minutes before removing them from the tin.
