Ingredients:

  • 10 large eggs
  • 2 cups (60g) fresh spinach, chopped
  • 1 cup (240g) cottage cheese
  • 1 cup (120g) shredded cheese
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder

Instructions:

  1. Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin with cooking spray or olive oil.
  2. In a mixing bowl, whisk together the eggs until fully blended.
  3. Add the cottage cheese, salt, pepper, and garlic powder to the eggs and mix until smooth.
  4. Stir in the chopped spinach and shredded cheese.
  5. Pour the mixture into the muffin cups, filling each about three-quarters full.
  6. Bake for 20-25 minutes or until the muffins are puffed and a toothpick inserted in the center comes out clean.
  7. Allow the muffins to cool for a few minutes before removing them from the tin.
