Ingredients:

  • 1 French baguette, sliced into ½ inch rounds
  • 2 tbsp extra virgin olive oil
  • 4 oz crumbled blue cheese
  • 6 fresh figs, stemmed and quartered
  • 2 tbsp honey
  • 1 tsp fresh thyme leaves
  • 1 pinch flaky sea salt
  • 4 slices Prosciutto di Parma

Instructions:

  1. Preheat the oven to 400°F (200°C). Arrange the baguette slices on a large rimmed baking sheet and lightly brush the tops with olive oil.
  2. Toast the baguette slices for 5–7 minutes until the edges are mahogany colored and the centers are slightly firm.
  3. Remove the toast from the oven. Place a generous crumble of blue cheese (approximately 1 tbsp) on each slice.
  4. Drape a small ribbon of prosciutto over the cheese. Press a quarter of a fresh fig firmly into the cheese. Note: Pressing the fig helps it stay put during the second bake
  5. Return the tray to the oven for 3–5 minutes until the cheese becomes velvety and starts to bubble.
  6. Remove from the oven and immediately drizzle with warmed honey.
  7. Finish with a sprinkle of fresh thyme leaves and a pinch of flaky sea salt.
