Ingredients:
- 1 sheet (250g) frozen puff pastry, thawed
- 1 egg (50g)
- 1 tsp (5ml) water
- 4 oz (113g) firm goat cheese, chilled
- 1/4 cup (60ml) fig jam
- 1 tbsp (15ml) honey
- 1/2 tsp (3g) sea salt
- 2 tbsp (8g) fresh thyme leaves
Instructions:
- Preheat your oven to 400°F (200°C). Line a mini muffin tin with parchment paper or grease lightly with non-stick spray.
- Unroll the puff pastry onto a lightly floured surface. Using a pizza cutter, slice the sheet into 24 equal squares (approximately 2-inch squares).
- Press each square gently into the bottom and slightly up the sides of the mini muffin cups.
- Place a small dollop (about 1 tsp) of chilled goat cheese in the center of each pastry square.
- Top the cheese with a small teaspoon of fig jam, pressing it slightly into the cheese to lock it in place.
- Brush the exposed edges of the puff pastry with the egg wash (beaten egg and water).
- Bake for 10–12 minutes until the pastry is puffed high and deep golden brown.
- Remove from the oven and immediately sprinkle with sea salt and fresh thyme leaves.
- Drizzle the warmed honey over the top in a zig-zag motion.
