Ingredients:
- 8 oz (225g) cream cheese, softened to room temperature
- 4 oz (115g) crumbled blue cheese
- 1 tbsp (15ml) fresh lemon juice
- 1 tbsp (15g) fresh chives, finely chopped
- 1 tbsp (15g) fresh parsley, finely chopped
- 1/4 tsp (1.5g) cracked black pepper
- 1/4 cup (30g) toasted walnuts, finely crushed
Instructions:
- Place the softened cream cheese into a mixing bowl. Using a rubber spatula or a hand mixer on medium speed, whip the cream cheese for 1-2 minutes until pale and fluffy.
- Gently fold in the crumbled blue cheese, lemon juice, chopped chives, parsley, and black pepper. Stir until the blue cheese is evenly distributed but still retains a few small, concentrated pockets of flavor.
- Fold in the crushed walnuts using a spatula to avoid over-processing them into a paste.
- Transfer the spread to a serving bowl or airtight container. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
