Ingredients:

  • 8 oz (225g) cream cheese, softened to room temperature
  • 4 oz (115g) crumbled blue cheese
  • 1 tbsp (15ml) fresh lemon juice
  • 1 tbsp (15g) fresh chives, finely chopped
  • 1 tbsp (15g) fresh parsley, finely chopped
  • 1/4 tsp (1.5g) cracked black pepper
  • 1/4 cup (30g) toasted walnuts, finely crushed

Instructions:

  1. Place the softened cream cheese into a mixing bowl. Using a rubber spatula or a hand mixer on medium speed, whip the cream cheese for 1-2 minutes until pale and fluffy.
  2. Gently fold in the crumbled blue cheese, lemon juice, chopped chives, parsley, and black pepper. Stir until the blue cheese is evenly distributed but still retains a few small, concentrated pockets of flavor.
  3. Fold in the crushed walnuts using a spatula to avoid over-processing them into a paste.
  4. Transfer the spread to a serving bowl or airtight container. Cover and refrigerate for at least 30 minutes to allow flavors to meld.
