Ingredients:

  • 1 cup (240ml) fruit juice
  • 1/2 cup (120ml) simple syrup
  • 1 tbsp (15ml) fresh lemon juice
  • 4 cups (945g) ice cubes

Instructions:

  1. Combine the fruit juice, simple syrup, and citrus juice in the blender jar. Blend on low for 10 seconds to ensure the syrup is fully integrated.
  2. Add the ice cubes in two batches. Start the blender on the lowest setting, then quickly ramp up to high.
  3. Use a tamper or stop the blender to stir the ice down until the sound changes from 'crushing' to a smooth 'whirring' sound.
  4. Check the texture; it should look like wet snow and hold a soft peak. Blend for another 15 seconds if too chunky, or add more ice and pulse if too liquid.
