Ingredients:

  • 8 oz cream cheese, softened
  • 1 cup sharp cheddar cheese, shredded
  • 1/2 cup parmesan cheese, freshly grated
  • 1/4 cup sour cream
  • 6 fresh jalapeños, seeded and finely diced
  • 6 slices thick-cut bacon, cooked crisp and crumbled
  • 2 cloves garlic, minced
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp unsalted butter, melted

Instructions:

  1. Heat the melted butter in a small skillet over medium heat. Sauté the diced fresh jalapeños and minced garlic for 3-5 minutes until they are softened and fragrant, but not browned. Remove from heat and let cool slightly.
  2. In a large mixing bowl, beat the softened cream cheese until smooth. Fold in the sour cream, shredded cheddar, and parmesan.
  3. Stir in the sautéed jalapeños, crumbled bacon, smoked paprika, salt, and pepper. Mix until the color is uniform and the bacon is evenly distributed.
  4. Spread the mixture evenly into a 9-inch oven-safe baking dish or cast-iron skillet.
  5. Bake at 350°F (175°C) for 15-20 minutes until the edges are bubbling and the center is hot. Optionally, broil on high for 2-3 minutes until the top is golden-brown.
