Ingredients:
- 1 lb lean ground beef (90% lean)
- 1 tbsp olive oil
- 1 small yellow onion, finely diced
- 2 cloves garlic, minced
- 1 tbsp chili powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup water
- 1 tbsp fresh lime juice
Instructions:
- Heat the olive oil over medium-high heat in a 12-inch skillet until it shimmers.
- Add the ground beef and spread it across the pan, letting it sit undisturbed for 3-4 minutes to develop a deep brown crust before breaking it apart.
- Add the diced onion and garlic, sautéing until the onion becomes translucent and fragrant.
- Reduce heat to medium. Sprinkle the chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper directly onto the meat.
- Stir constantly for 60-90 seconds to bloom the spices in the beef fat.
- Pour in the water and lime juice. Stir well and simmer for 3-5 minutes until the liquid has reduced by half and created a glossy coating.
- Remove from heat once the meat is tender and the sauce is velvety.
