Ingredients:

  • 1 lb lean ground beef (90% lean)
  • 1 tbsp olive oil
  • 1 small yellow onion, finely diced
  • 2 cloves garlic, minced
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup water
  • 1 tbsp fresh lime juice

Instructions:

  1. Heat the olive oil over medium-high heat in a 12-inch skillet until it shimmers.
  2. Add the ground beef and spread it across the pan, letting it sit undisturbed for 3-4 minutes to develop a deep brown crust before breaking it apart.
  3. Add the diced onion and garlic, sautéing until the onion becomes translucent and fragrant.
  4. Reduce heat to medium. Sprinkle the chili powder, cumin, paprika, garlic powder, onion powder, salt, and pepper directly onto the meat.
  5. Stir constantly for 60-90 seconds to bloom the spices in the beef fat.
  6. Pour in the water and lime juice. Stir well and simmer for 3-5 minutes until the liquid has reduced by half and created a glossy coating.
  7. Remove from heat once the meat is tender and the sauce is velvety.
