Ingredients:
- 1 lb (450g) Cremini or Shiitake mushrooms, finely diced
- 1 tbsp (15ml) olive oil
- 2 cloves (6g) garlic, minced
- 1 small (60g) shallot, finely minced
- 1 tsp (2g) fresh thyme leaves
- 2 tbsp (30g) light goat cheese, crumbled
- 1/2 tsp (3g) sea salt
- 1/4 tsp (1g) black pepper
- 1 sheet (480g) frozen puff pastry, thawed
- 1 large (50g) egg, beaten
- 1 tbsp (15ml) water
Instructions:
- Heat olive oil in a skillet over medium-high heat. Add the diced mushrooms in a single layer and sauté without stirring for 3 minutes to achieve a mahogany-colored sear.
- Stir in the shallots and garlic, cooking until fragrant for about 2 minutes.
- Fold in the fresh thyme, salt, and pepper. Continue cooking until the moisture has completely evaporated and the mixture is a thick paste.
- Remove from heat and stir in the light goat cheese until just melted. Let cool slightly.
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry sheet slightly and use a pizza cutter to slice into 16 equal squares (approximately 2x2 inches).
- Place the squares on the baking sheet, leaving 1 inch of space between each.
- Place 1 rounded tablespoon of the mushroom mixture in the center of each square.
- Gently fold the corners of the pastry toward the center to create a small bundle or leave open for a tartlet style.
- Brush the exposed pastry edges with the beaten egg and water mixture.
- Bake for 15–20 minutes, or until the pastry is golden brown and crisp.
