Ingredients:

  • 1.25 cups all-purpose flour (150g)
  • 0.5 cup unsalted butter, softened (113g)
  • 0.5 cup light brown sugar, packed (100g)
  • 0.25 cup granulated sugar (50g)
  • 2 tablespoons whole milk (30g)
  • 1 teaspoon pure vanilla extract (4g)
  • 0.5 teaspoon fine sea salt (3g)
  • 0.5 cup semi-sweet mini chocolate chips (90g)

Instructions:

  1. Heat-treat the flour: Place flour in a microwave-safe bowl and heat in 30-second intervals, stirring between, until the temperature reaches 160°F (approx. 2 minutes). Alternatively, bake on a sheet at 350°F for 5-7 minutes.
  2. Allow the flour to cool completely, then sift through a fine-mesh strainer to remove any clumps.
  3. In a large mixing bowl, beat the softened butter, brown sugar, and granulated sugar with a hand mixer for 2-3 minutes until the mixture is pale and aerated.
  4. Add the vanilla extract, sea salt, and milk. Mix until well combined and emulsified.
  5. Add the cooled, sifted flour to the wet ingredients. Mix on low speed until just combined to avoid a gummy texture.
  6. Fold in the mini chocolate chips by hand until evenly distributed.
