Ingredients:

  • 1 lb lean ground beef
  • 1 cup cooked quinoa
  • 1 tbsp olive oil
  • 2 medium carrots, diced
  • 1 red bell pepper, diced
  • 2 cups chopped kale
  • 3 cloves garlic, minced
  • 1/2 yellow onion, diced
  • 2 tbsp fresh lime juice
  • 1 tbsp soy sauce
  • 1 tsp honey
  • 1/2 tsp smoked paprika
  • salt to taste
  • black pepper to taste

Instructions:

  1. Whisk together lime juice, soy sauce, honey, and smoked paprika in a small bowl; set aside.
  2. Dice carrots, red bell pepper, and onion into uniform 1/2-inch pieces.
  3. Heat olive oil in a skillet over medium-high heat. Add ground beef in a flat layer and sear undisturbed for 3 minutes to develop a brown crust, then break apart and cook until fully browned.
  4. Add diced onion and carrots to the skillet, sautéing until the onions are translucent.
  5. Stir in the diced red bell pepper and cook for another 2-3 minutes.
  6. Add minced garlic and chopped kale, stirring until the greens are wilted.
  7. Fold in the cooked quinoa and pour the prepared glaze over the mixture.
  8. Toss all ingredients together for 1-2 minutes until well-coated and heated through. Season with salt and black pepper.
