Ingredients:
- 1 lb lean ground beef
- 1 cup cooked quinoa
- 1 tbsp olive oil
- 2 medium carrots, diced
- 1 red bell pepper, diced
- 2 cups chopped kale
- 3 cloves garlic, minced
- 1/2 yellow onion, diced
- 2 tbsp fresh lime juice
- 1 tbsp soy sauce
- 1 tsp honey
- 1/2 tsp smoked paprika
- salt to taste
- black pepper to taste
Instructions:
- Whisk together lime juice, soy sauce, honey, and smoked paprika in a small bowl; set aside.
- Dice carrots, red bell pepper, and onion into uniform 1/2-inch pieces.
- Heat olive oil in a skillet over medium-high heat. Add ground beef in a flat layer and sear undisturbed for 3 minutes to develop a brown crust, then break apart and cook until fully browned.
- Add diced onion and carrots to the skillet, sautéing until the onions are translucent.
- Stir in the diced red bell pepper and cook for another 2-3 minutes.
- Add minced garlic and chopped kale, stirring until the greens are wilted.
- Fold in the cooked quinoa and pour the prepared glaze over the mixture.
- Toss all ingredients together for 1-2 minutes until well-coated and heated through. Season with salt and black pepper.
