Ingredients:

  • 1/2 cup (45g) old fashioned rolled oats
  • 1/2 cup (120ml) water
  • 1/2 cup (120ml) unsweetened almond milk
  • 1/2 cup (75g) fresh blueberries
  • 1/2 small (50g) banana, sliced
  • 1 tbsp (8g) crushed walnuts
  • 1/4 tsp ground cinnamon
  • 1 pinch (0.5g) sea salt
  • 1 tsp (3g) ground flaxseed

Instructions:

  1. Pour the 1/2 cup water and 1/2 cup almond milk into your small saucepan.
  2. Add the 1/4 tsp cinnamon and the pinch of sea salt to the cold liquid.
  3. Set the burner to medium heat and wait until tiny bubbles form around the edges.
  4. Stir in the 1/2 cup old fashioned rolled oats.
  5. Reduce the heat to low medium and cook for 8 to 10 minutes until the liquid is mostly absorbed and the oats look plump.
  6. Use your spoon to move the oats around every minute or two.
  7. Stir in the 1 tsp ground flaxseed during the last minute of cooking.
  8. Gently fold in half of the blueberries and half of the banana slices until they are warmed through but not mushy.
  9. Turn off the stove and let the pot sit for 1 minute to thicken.
  10. Transfer to a bowl and top with the remaining fruit and the 1 tbsp crushed walnuts.
