Ingredients:

  • 1/2 cup (45g) old fashioned rolled oats
  • 1 cup (240ml) water
  • 1/4 tsp (1g) ground cinnamon
  • 1/8 tsp (0.5g) sea salt
  • 1/2 cup (75g) fresh peaches, diced
  • 1 tsp (5ml) pure vanilla extract
  • 1 tbsp (15ml) maple syrup
  • 2 tbsp (30ml) heavy cream
  • 1 tbsp (15g) unsalted butter

Instructions:

  1. Combine the rolled oats, water, cinnamon, and salt in a medium saucepan.
  2. Bring to a gentle boil over medium heat, then reduce to a simmer. Stir occasionally until the oats have absorbed most of the liquid and the mixture smells nutty and warm.
  3. Fold in the diced peaches, maple syrup, and vanilla extract.
  4. Cook for an additional 2 minutes, stirring gently until the peaches are softened but still hold their shape and the liquid has thickened into a glossy glaze.
  5. Remove the pan from the heat.
  6. Stir in the butter and heavy cream until fully incorporated and the oatmeal reaches a velvety, shimmering consistency.
