- 8 oz cream cheese, softened
- 1/2 cup basil pesto
- 1/4 cup grated Parmesan cheese
- 2 cloves minced garlic
- 1 cup shredded mozzarella cheese
Instructions:
- Preheat your oven to 400°F (200°C) and grease a 9x13 inch baking dish with a light coating of olive oil.
- Pat the chicken breasts dry with a paper towel and season both sides evenly with salt and black pepper.
- Place chicken breasts in the dish in a single layer.
- In a medium mixing bowl, combine the softened cream cheese and basil pesto.
- Fold in the grated Parmesan and minced garlic until the mixture is smooth and velvety.
- Divide the mixture evenly among the chicken breasts, spreading it to the edges to fully cover the meat.
- Sprinkle the shredded mozzarella evenly over the pesto layer.
- Bake for 20 minutes until the cheese is bubbling and mahogany-colored, and the chicken reaches an internal temperature of 165°F (74°C).
- Let the dish rest for 5 minutes before serving to allow the juices to redistribute.
