Ingredients:

  • 3 cups (450g) fresh strawberries or mango chunks
  • 1 ripe banana (120g)
  • 1/2 cup (120ml) coconut water
  • 1/4 cup (60ml) fresh lime juice
  • 2 tbsp (42g) honey

Instructions:

  1. Place the fruit and banana into the blender. Pulse on high until the mixture is completely smooth and glossy with no visible fruit chunks.
  2. Add the coconut water and lime juice to the blender. Blend on low for 30 seconds. Taste the mixture to ensure it is slightly sweeter than desired, as freezing dulls sweetness.
  3. Pour the mixture into popsicle molds, leaving 1/4 inch of headspace at the top for expansion.
  4. Insert popsicle sticks firmly and place in the freezer for at least 6 hours, or until solid and opaque.
