Ingredients:

  • 4 cups cold whole milk
  • 1/3 cup unsweetened Dutch-processed cocoa powder
  • 1/4 cup extra-fine granulated sugar
  • 1 tsp pure vanilla extract
  • 1/8 tsp fine sea salt

Instructions:

  1. Place 1/3 cup unsweetened Dutch processed cocoa powder into a fine strainer over a medium bowl. Note: This prevents grainy textures.
  2. Whisk in 1/4 cup extra fine granulated sugar and 1/8 tsp fine sea salt until the dry mix is uniform in color.
  3. Pour in just 1/4 cup of the cold whole milk. Note: This is the most important step for a smooth drink.
  4. Stir vigorously until a thick, glossy chocolate paste forms with no visible dry spots.
  5. Slowly incorporate milk, pouring in the remaining milk about 1/2 cup at a time.
  6. Whisk steadily until the liquid is a uniform dark brown and a light foam appears on top.
  7. Stir in 1 tsp pure vanilla extract.
  8. Place the pitcher in the fridge for at least 5 minutes. Note: This allows the flavors to meld together.
  9. Give it one last quick whisk until any settled cocoa is redistributed.
  10. Pour into chilled glasses for the ultimate temperature contrast.
