Ingredients:

  • 2 cans (15 oz each) organic chickpeas, rinsed and thoroughly dried
  • 2 cups sweet potato, cubed into 1/2 inch pieces
  • 1 large head of broccoli, cut into small florets
  • 1 large red bell pepper, sliced into strips
  • 3 tbsp avocado oil
  • 1 tsp smoked paprika
  • 1 tsp ground cumin
  • 0.5 tsp garlic powder
  • 0.5 tsp sea salt
  • 4 cups baby kale or arugula
  • 2 cups cooked quinoa
  • 0.33 cup runny tahini
  • 1 large lemon, juiced
  • 1 tsp maple syrup
  • 4 tbsp ice-cold water

Instructions:

  1. Heat the oven. Set your oven to 220°C (425°F). Note: This high temperature is non negotiable for achieving the correct texture.
  2. Dry the chickpeas. Rinse 2 cans of chickpeas and roll them between kitchen towels until they are dull and dry to the touch. Let them air dry for 15 minutes.
  3. Season the base. In a large bowl, toss the dry chickpeas and 2 cups of cubed sweet potatoes with 1.5 tablespoons of avocado oil, smoked paprika, cumin, and garlic powder.
  4. Spread the layer. Place the chickpea mixture on the first rimmed baking sheet in a single layer. Ensure no overlap to allow for even airflow.
  5. Prep the greens. Toss 1 head of broccoli florets and 1 sliced red pepper with the remaining 1.5 tablespoons of oil on the second baking sheet.
  6. Start the roast. Place both sheets in the oven for 30 minutes. Flip and toss the contents halfway through for even browning.
  7. Emulsify the sauce. Whisk 0.33 cup tahini, lemon juice, and maple syrup. Add 4 tablespoons of ice cold water, one spoon at a time, until the sauce is light and velvety.
  8. Season the finish. Remove the pans from the oven and immediately sprinkle with 0.5 tsp sea salt while the oil is still sizzling.
  9. Build the bowl. Layer 1 cup of greens and 0.5 cup of cooked quinoa in each bowl.
  10. Final assembly. Top with a generous scoop of the roasted mixture and a heavy drizzle of the tahini sauce. > Chef's Note: If your tahini sauce looks like it’s curdling when you first add the lemon juice, don't panic! This is normal. Just keep whisking and adding the cold water; it will eventually smooth out into a beautiful, creamy dressing.
