Ingredients:

  • 3 cups (450g) fresh strawberries, hulled and halved
  • 1 tbsp (15ml) fresh lemon juice
  • 2 tbsp (30ml) maple syrup

Instructions:

  1. Wash the strawberries thoroughly and remove the green hulls. If using frozen strawberries, let them thaw for approximately 20 minutes.
  2. Combine the strawberries, lemon juice, and maple syrup in a blender. Pulse until the mixture is a vibrant, uniform red and smooth.
  3. Optional: Pour the blended mixture through a fine-mesh strainer to remove the seeds for a professional, seedless finish.
  4. Divide the mixture evenly among 10 popsicle molds, leaving about 1/4 inch of space at the top to allow for expansion during freezing.
  5. Insert the popsicle sticks. If the molds do not have lids, cover the top with aluminum foil and poke the sticks through the center to keep them upright.
  6. Freeze for at least 4 hours or until completely solid.
