Ingredients:

  • 4 oz softened cream cheese
  • 2 tbsp finely grated carrots, squeezed dry
  • 1 tbsp minced fresh parsley
  • 0.25 tsp garlic powder
  • 2 large (10-inch) whole wheat tortillas
  • 5 slices low-sodium deli turkey
  • 2 slices mild cheddar cheese

Instructions:

  1. In a small mixing bowl, whip the softened cream cheese with the grated carrots, minced parsley, and garlic powder until smooth.
  2. Using an offset spatula or butter knife, spread an even, edge-to-edge layer of the cream cheese mixture across the entire surface of each tortilla to create a moisture barrier.
  3. Place the turkey slices in a single layer over the cream cheese, leaving a 1/2 inch border at the top edge.
  4. Layer the cheese slices over the turkey, centering them to facilitate a tighter roll.
  5. Roll the tortilla tightly starting from the bottom, maintaining tension to create a firm cylinder.
