Ingredients:

  • 1.5 cups (190g) all-purpose flour
  • 1 cup (245g) plain non-fat Greek yogurt
  • 1.5 tsp baking powder
  • 0.5 tsp fine sea salt
  • 0.5 tsp garlic powder
  • 0.5 tsp dried oregano
  • 1 tsp olive oil

Instructions:

  1. In a large mixing bowl, whisk together the all-purpose flour, baking powder, salt, garlic powder, and dried oregano. Add the Greek yogurt and use a spatula to fold the yogurt into the flour until shaggy clumps form and no dry flour remains.
  2. Turn the dough onto a lightly floured surface. Knead by hand for 2–3 minutes until the moisture is evenly distributed and the dough is tacky but does not stick to your fingers.
  3. Stretch the dough into a 25 cm circle or rectangle.
  4. Brush the dough with 1 tsp olive oil until the surface glimmers.
  5. Bake at 200°C for 5 minutes for extra crispiness (Optional).
  6. Layer your sauce, cheese, and meats.
  7. Bake for another 5-7 minutes until the cheese is blistered and golden.
