Ingredients:
- 1 medium zucchini, grated (approx. 8 oz / 225g)
- 1 medium potato, grated (approx. 8 oz / 225g)
- ¼ cup (50g) yellow onion, finely minced
- 2 cloves garlic, minced
- 1 large egg, beaten
- ¼ cup (30g) all-purpose flour
- ½ cup (50g) sharp cheddar cheese, shredded
- ½ tsp (3g) salt
- ¼ tsp (1g) black pepper
- 1 tbsp (4g) fresh parsley, chopped
- 3 tbsp (42ml) neutral oil
Instructions:
- Grate the zucchini and potato. Place both in a clean kitchen towel and twist tightly over the sink, squeezing until no more liquid escapes and the shreds feel dry to the touch.
- In a large bowl, combine the squeezed vegetables, minced onion, and garlic.
- Stir in the beaten egg, flour, shredded cheese, salt, pepper, and parsley. Mix until just combined; do not overwork the batter.
- Heat neutral oil in a skillet over medium-high heat until it shimmers.
- Scoop about ¼ cup of batter per fritter into the pan, pressing each one flat with a spatula.
- Fry for 3-4 minutes per side until a mahogany-colored crust forms.
- Transfer the fritters to paper towels to remove excess oil before serving.
