Ingredients:
- 2 cups (225g) grated zucchini, squeezed dry
- 1/2 cup (50g) finely diced yellow onion
- 2 cloves (6g) garlic, minced
- 2 tbsp (8g) fresh parsley, chopped
- 2 large (100g) eggs, beaten
- 1/4 cup (30g) olive oil, melted
- 1/2 cup (60g) almond flour
- 1 tsp (5g) salt
- 1/2 tsp (2g) cracked black pepper
- 1 tsp (2g) dried oregano
- 1/2 cup (50g) grated Parmesan cheese
- 1 cup (115g) shredded Monterey Jack cheese
Instructions:
- Preheat the oven to 350°F (175°C) and lightly grease an 8x8 inch baking pan.
- Grate the zucchini, sprinkle with a pinch of salt, and let sit for 5 minutes.
- Use a kitchen towel or cheesecloth to firmly squeeze the zucchini, removing as much excess liquid as possible.
- In a large mixing bowl, whisk the beaten eggs and melted olive oil until emulsified.
- Fold in the squeezed zucchini, diced onion, minced garlic, and chopped parsley.
- Stir in the almond flour, salt, pepper, and dried oregano until the vegetables are evenly coated.
- Gently fold in the shredded Monterey Jack and grated Parmesan cheese, ensuring no large clumps remain.
- Pour the mixture into the prepared baking pan and smooth the top with a spatula.
- Bake for 25–30 minutes, or until the top is a deep golden-brown and the edges pull away slightly from the sides of the pan.
